Soy Curls With Toasted Pepitas

Today was really really cold and I desperately wanted something warm and hearty to eat for lunch. Since it’s been cold all week and I’ve been a bit too lazy to shop, I was out of a lot of ingredients. I improvised in a big way and came up with a really tasty dish made with soy curls and the other lonely items in my pantry.

In case you’re unfamiliar with soy curls, they’re made by a company called Butler and are vegan, gluten free, non GMO and made from the whole soybean.They can also take on a lot of different flavors, in most cases the chicken or chik’n types of dishes. Anyway, they can accept a good amount of seasoning, so while I went for mild, feel free to have a  heavier hand with the seasonings.

Soy Curls With Toasted Pepitas

Serves: 4

Ingredients

  • 1 cup of soy curls
  • 1 1/2 cup of warm water or broth
  • 1 medium size onion
  • 2 Tbsp. olive oil
  • 1 Tbsp. chili paste
  • 1 heaping Tbsp. peanut butter
  • 1/2 tsp curry powder
  • 1 Tbsp. nutritional yeast
  • 1 tsp. garlic powder
  • 3 Tbsp. Pepitas (shelled pumpkin seeds)
  • 1/2 tsp. chili powder
  • 1/4 tsp. black pepper
  • Olive oil mister

Instructions

Place soy curls in bowl and saturate with warm water. Let sit for a few minutes until they plump up and are completely plump.

Drain soy curls

While soy curls drain, chop onion into smallish pieces and saute with olive oil in a large deep pan until slightly brown.

Stir chili paste into peanut butter and use silicon tipped spatula to thoroughly blend the mixture into the onions and oil.

Add soy curls to pan and cook over small-ish flame. Add seasonings and stir regularly to avoid burning.

While soy curls are cooking,spritz olive oil on pepitas and then toss with chili pepper and black pepper until lightly coated. Toast in a separate pan until they very slightly brown or "pop." Reserve 1 Tbsp. for garnish and mix the rest in with the soy curl mixture.

Serve with brown rice and garnish with remaining pepitas.
